- 3 pounds bone-in, skin-on chicken thighs
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes (optional)
- Lemon slices and fresh herbs for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, rosemary, thyme, salt, black pepper, paprika, and red pepper flakes until well combined.
- Add the chicken thighs to the bowl and toss to coat them evenly with the marinade. Let the chicken marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator for more flavor.
- Arrange the marinated chicken thighs in a single layer on a baking sheet lined with parchment paper. Pour any remaining marinade over the chicken.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). The skin should be golden and crispy.
- For an extra crispy skin, broil the chicken for an additional 2-3 minutes, watching closely to prevent burning.
- Remove from the oven and let rest for 5 minutes before serving. Garnish with lemon slices and fresh herbs if desired.
Notes
- For a smoky flavor, add 1 teaspoon of smoked paprika to the marinade.
- Serve with a side of roasted vegetables or a fresh salad for a complete meal.
