- 2 pounds bone-in, skin-on chicken thighs
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 6 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, black pepper, paprika, and red pepper flakes until well combined.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.
- Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it.
- Arrange the marinated chicken thighs in the prepared baking dish, skin side up. Pour any remaining marinade over the chicken.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The skin should be golden and crispy.
- Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with chopped parsley.
Notes
- For a smoky flavor, add 1 teaspoon of smoked paprika instead of regular paprika.
- Serve with a side of roasted vegetables or a fresh salad for a complete meal.
