Description

A delicious and easy recipe for Lemon Garlic Butter Chicken Thighs served with fresh green beans.


Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 pound fresh green beans, trimmed
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt, pepper, paprika, and thyme. Once the oil is hot, add the chicken thighs skin-side down and sear for about 5-7 minutes until the skin is golden brown. Flip the chicken and cook for an additional 3-4 minutes.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add the butter and minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Add the green beans to the skillet and toss them in the garlic butter for about 2-3 minutes. Squeeze the lemon juice over the green beans and sprinkle with lemon zest.
  5. Nestle the chicken thighs back into the skillet, skin-side up, on top of the green beans. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the green beans are tender.
  6. Remove from the oven and let it rest for 5 minutes before serving.

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the garlic butter.
  • Substitute the green beans with asparagus or broccoli for a different flavor and texture.
