- 2 cups cooked pasta (any shape)
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 large eggs
- 1/4 cup chopped fresh parsley
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup olive oil (for frying)
Instructions
- In a large mixing bowl, combine the cooked pasta, grated Parmesan cheese, breadcrumbs, eggs, parsley, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Mix until well combined.
- Heat the olive oil in a large skillet over medium heat.
- Using a tablespoon, scoop out the pasta mixture and form it into small patties (about 2 inches in diameter).
- Carefully place the patties into the hot skillet, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy.
- Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil. Repeat with the remaining mixture.
- Serve warm, garnished with additional parsley or a side of marinara sauce for dipping.
Notes
- Add diced vegetables like bell peppers, zucchini, or spinach to the mixture for extra flavor and nutrition.
- For a cheesy twist, mix in some shredded mozzarella or cheddar cheese before frying.
