Ingredients

  • 1 pound flank steak, thinly sliced against the grain
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon rice vinegar
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon vegetable oil
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced cucumbers
  • 1/4 cup chopped green onions
  • 1/4 cup cilantro, chopped
  • Lime wedges for serving

Instructions

  1. In a bowl, combine soy sauce, brown sugar, sesame oil, garlic, ginger, rice vinegar, and gochujang. Mix well to create a marinade.
  2. Add the sliced flank steak to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Heat vegetable oil in a large skillet over medium-high heat. Remove the steak from the marinade, allowing excess marinade to drip off.
  4. Add the steak to the skillet in a single layer. Cook for 2-3 minutes on each side until browned and cooked through. Work in batches if necessary to avoid overcrowding the pan.
  5. While the steak is cooking, warm the corn tortillas in a separate skillet or directly over a gas flame until pliable.
  6. To assemble the tacos, place a portion of the cooked steak on each tortilla. Top with shredded cabbage, diced cucumbers, green onions, and cilantro.
  7. Serve with lime wedges on the side for squeezing over the tacos.

Notes

  • For a spicier kick, add sliced jalapeños on top of the tacos.
  • To make it a complete meal, serve with a side of kimchi or a simple cucumber salad.
