John Wayne Casserole is a delicious and hearty dish that combines ground beef, beans, corn, and cheese, topped with fresh vegetables and tortilla chips, making it a family favorite.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • 2 cups shredded lettuce
  • 1 medium tomato, diced
  • 1 avocado, diced
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain any excess fat.
  4. Stir in the black beans, corn, diced tomatoes, and taco seasoning. Mix well and let it simmer for 5 minutes. Season with salt and pepper to taste.
  5. In a greased 9×13-inch baking dish, spread the beef mixture evenly. Top with sour cream, then sprinkle the shredded cheddar cheese over the top.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it cool for a few minutes. Top with crushed tortilla chips, shredded lettuce, diced tomato, and avocado before serving.
