A creamy and flavorful chicken salad inspired by jalapeño poppers, perfect for a light meal or appetizer.

- 2 cups cooked chicken, shredded
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1/4 cup pickled jalapeños, chopped
- 1/4 cup green onions, sliced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon fresh cilantro, chopped (optional)
Instructions
- In a large mixing bowl, combine the shredded chicken, softened cream cheese, and mayonnaise. Mix until well combined and creamy.
- Add the shredded cheddar cheese, chopped jalapeños, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until all ingredients are evenly distributed.
- Taste the mixture and adjust seasoning if necessary, adding more salt, pepper, or jalapeños for extra heat.
- If time allows, cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
- Serve the chicken salad on a bed of lettuce, in a sandwich, or with crackers. Garnish with fresh cilantro if desired.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
- Add diced bell peppers or celery for extra crunch and flavor.
