Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 pound total)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably Italian seasoned)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil

Instructions

  1. Slice each chicken breast in half horizontally to create thinner cutlets.
  2. Place the cutlets between two sheets of plastic wrap and gently pound them to about 1/2 inch thickness.
  3. Season both sides with salt, pepper, garlic powder, and onion powder.
  4. Set up a breading station: Place the flour in one shallow dish, beat the eggs in a second dish, and combine the breadcrumbs, Parmesan cheese, and chopped basil in a third dish.
  5. Dredge each chicken cutlet in flour, shaking off the excess.
  6. Dip into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.
  7. In a large skillet, heat the olive oil over medium heat.
  8. Add the breaded chicken cutlets and cook for about 4-5 minutes per side, or until golden brown and cooked through.
  9. Remove the cutlets from the skillet and place them on a baking sheet.
  10. Spoon a little marinara sauce over each cutlet and sprinkle with shredded mozzarella cheese.
  11. Broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly.
  12. Serve immediately with additional marinara sauce on the side.

Notes

  • For added flavor, consider marinating the chicken in olive oil, lemon juice, and additional basil for 30 minutes before breading.
