A delicious and vibrant dish featuring grilled chicken marinated in honey and lime, topped with a fresh mango salsa.

- 2 large boneless, skinless chicken breasts (about 1 pound total)
- 1/4 cup honey
- 1/4 cup lime juice (about 2 limes)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1/2 red bell pepper, diced
- 1 jalapeño, seeded and minced (optional)
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- In a small bowl, whisk together honey, lime juice, olive oil, garlic powder, chili powder, salt, and pepper. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- While the chicken is marinating, prepare the mango salsa. In a medium bowl, combine diced mango, red onion, red bell pepper, jalapeño (if using), cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.
- Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is cooked through.
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Serve the sliced chicken topped with mango salsa. Enjoy!
Notes
- For added flavor, marinate the chicken overnight.
- Substitute the mango with pineapple or peach for a different fruit salsa.
