- 2 pounds bone-in, skin-on chicken thighs
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (optional)
Instructions
- Preheat your oven to 375°F.
- In a medium bowl, whisk together the Dijon mustard, honey, olive oil, apple cider vinegar, garlic powder, onion powder, salt, black pepper, and thyme until well combined.
- Place the chicken thighs in a large baking dish and pour the honey Dijon mixture over the chicken, making sure each piece is well coated.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F.
- For a crispy skin, broil the chicken for an additional 2-3 minutes at the end of cooking.
- Let the chicken rest for 5 minutes before serving.

- For a twist, try adding a tablespoon of fresh chopped rosemary or parsley to the marinade for added flavor.
- You can also substitute chicken breasts for thighs if you prefer a leaner option, adjusting the cooking time as needed to ensure they remain juicy.
