A comforting and hearty beef stew made in a slow cooker, perfect for family dinners.
Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 cup frozen peas
Instructions
- Season the beef cubes with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Brown the beef in batches, about 5 minutes per batch, then transfer to the slow cooker.
- In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until softened, then add to the slow cooker.
- Add the sliced carrots, diced potatoes, beef broth, Worcestershire sauce, dried thyme, and bay leaf to the slow cooker. Stir to combine.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
- About 30 minutes before serving, stir in the frozen peas. Remove the bay leaf before serving.
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the stew during the last 30 minutes of cooking.
- Feel free to add other vegetables like green beans or mushrooms for added flavor and nutrition.
