Description

A comforting and hearty beef stew made in a slow cooker, perfect for family dinners.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup frozen peas

Instructions

  1. Season the beef cubes with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Brown the beef in batches, about 5 minutes per batch, then transfer to the slow cooker.
  2. In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until softened, then add to the slow cooker.
  3. Add the sliced carrots, diced potatoes, beef broth, Worcestershire sauce, dried thyme, and bay leaf to the slow cooker. Stir to combine.
  4. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
  5. About 30 minutes before serving, stir in the frozen peas. Remove the bay leaf before serving.

Notes

  • For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the stew during the last 30 minutes of cooking.
  • Feel free to add other vegetables like green beans or mushrooms for added flavor and nutrition.
