  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 cup frozen peas
  • 1 teaspoon dried thyme

  • Salt and pepper to taste
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the sliced carrots and diced potatoes to the skillet, cooking for another 5 minutes until they begin to soften.
  4. Stir in the frozen peas, dried thyme, dried rosemary, salt, and pepper. Mix well.
  5. In a separate bowl, combine the chicken pieces with the diced tomatoes (with their juice) and chicken broth. Pour this mixture into the skillet with the vegetables.
  6. Bring the mixture to a simmer, then reduce the heat and stir in the heavy cream. Cook for an additional 5 minutes.
  7. Transfer the mixture to a greased 9×13 inch casserole dish.
  8. Sprinkle the shredded cheddar cheese evenly over the top, followed by the breadcrumbs.
  9. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
  10. Let it cool for about 5 minutes before serving.
