- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup mashed ripe banana (about 1 medium banana)
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1/4 cup almond butter (or peanut butter)
- 1/2 teaspoon vanilla extract
- 1/2 cup dark chocolate chips or dried fruit (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon. Stir until well mixed.
- In another bowl, mix together the mashed banana, honey (or maple syrup), applesauce, almond butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in the dark chocolate chips or dried fruit.
- Using a tablespoon, scoop out the dough and place it on the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of the spoon.
- Bake for 12-15 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a chewier cookie, add an extra tablespoon of applesauce.
- You can substitute the whole wheat flour with almond flour for a gluten-free option.
- For added flavor, consider mixing in a handful of chopped nuts or seeds.
