Description

A delicious Grilled Vegetable Burrata Sandwich featuring fresh grilled vegetables and creamy burrata cheese, perfect for a light meal or lunch.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • Salt and pepper to taste
  • 4 slices of crusty bread (like ciabatta or sourdough)
  • 8 ounces burrata cheese
  • 1 cup fresh arugula
  • 1 tablespoon balsamic glaze (optional)

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. In a large bowl, toss the zucchini, yellow squash, red bell pepper, and red onion with olive oil, salt, and pepper.
  3. Grill the vegetables for about 4-5 minutes on each side, or until they are tender and have nice grill marks. Remove from the grill and set aside.
  4. While the vegetables are grilling, toast the slices of bread on the grill until golden brown, about 2-3 minutes per side.
  5. To assemble the sandwich, place a generous amount of grilled vegetables on one slice of toasted bread. Tear the burrata cheese into pieces and place it on top of the vegetables.
  6. Add a handful of arugula on top of the burrata, and drizzle with balsamic glaze if desired.
  7. Top with another slice of toasted bread, press down gently, and slice in half to serve.

Notes

  • For a smoky flavor, add a pinch of smoked paprika to the vegetables before grilling.
  • To make it a heartier meal, add sliced avocado or a spread of pesto on the bread before assembling the sandwich.
