- 4 ears of fresh corn, husked
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1/2 cup mayonnaise
- 1/2 cup crumbled cotija cheese
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1–2 tablespoons chipotle adobo sauce (adjust to taste)
- Lime wedges for serving
Instructions
- Preheat your grill to medium-high heat.
- Brush the corn with olive oil and sprinkle with salt and chili powder.
- Place the corn directly on the grill and cook for about 10-15 minutes, turning occasionally, until charred and tender.
- While the corn is grilling, in a bowl, mix together the mayonnaise, chipotle adobo sauce, and lime juice until well combined.
- Once the corn is done, remove it from the grill and let it cool slightly.
- Brush the chipotle mayonnaise mixture generously over each ear of corn.
- Sprinkle crumbled cotija cheese and chopped cilantro over the top.
- Serve immediately with lime wedges on the side for squeezing over the corn.
Notes
- You can substitute cotija cheese with feta cheese for a similar flavor.
- For a spicier kick, add more chipotle adobo sauce or sprinkle some cayenne pepper on top.
- If you prefer a lighter version, use Greek yogurt instead of mayonnaise.
