Description
A refreshing and healthy Grilled Chicken Mango Salad that combines the flavors of grilled chicken, fresh mango, and mixed greens.

- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 cups mixed salad greens (such as spinach, arugula, and romaine)
- 1 ripe mango, peeled and diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tablespoon honey (optional)
Instructions
- Preheat the grill to medium-high heat. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Brush the mixture over both sides of the chicken breasts.
- Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes before slicing.
- In a large bowl, combine the mixed salad greens, diced mango, red bell pepper, red onion, avocado, and cilantro.
- Slice the grilled chicken and add it to the salad. Drizzle with lime juice and honey, if using. Toss gently to combine all ingredients.
- Serve immediately or chill in the refrigerator for 15-20 minutes for a refreshing cold salad.
Notes
- For added crunch, sprinkle some toasted nuts or seeds on top before serving.
- Substitute grilled shrimp or tofu for the chicken to make it a seafood or vegetarian dish.
