- 2 cups cooked jasmine rice
- 1 pound ground chicken
- 1 tablespoon vegetable oil
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1 cup broccoli florets
- 1/2 cup sliced bell peppers (any color)
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
- Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
- In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sugar, sesame oil, and red pepper flakes. Pour this sauce over the cooked chicken, stirring to combine.
- Add the broccoli florets and sliced bell peppers to the skillet. Cook for an additional 5 minutes, or until the vegetables are tender but still crisp.
- To serve, place a scoop of jasmine rice in a bowl, top with the General Tso’s chicken mixture, and garnish with sliced green onions and sesame seeds.
Notes
- For a healthier option, substitute brown rice for jasmine rice.
- Add other vegetables like snap peas or carrots for extra color and nutrition.
