- 3 to 4 pounds whole chicken, cleaned and patted dry
- 1 tablespoon olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- 1 tablespoon dried oregano
- 1 lemon, halved
- 4 cloves garlic, crushed
- Fresh herbs (such as thyme or rosemary) for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a small bowl, mix together olive oil, salt, black pepper, garlic powder, thyme, rosemary, and oregano to create a seasoning paste.
- Rub the seasoning paste all over the chicken, including under the skin and inside the cavity.
- Stuff the cavity with the halved lemon and crushed garlic cloves.
- Place the chicken breast-side up in a roasting pan or oven-safe skillet.
- Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
- Let the chicken rest for 10-15 minutes before carving. Garnish with fresh herbs if desired.
Notes
- For extra crispy skin, broil the chicken for the last 5 minutes of cooking.
- You can add vegetables like carrots, potatoes, or onions to the roasting pan for a complete meal.
