Delicious and fluffy pancakes made with ricotta cheese for a rich and creamy texture.
Ingredients

- 1 cup ricotta cheese
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, melted
- Cooking spray or additional butter for the pan
Instructions
- In a large bowl, whisk together the ricotta cheese, eggs, milk, and vanilla extract until smooth.
- In another bowl, combine the flour, sugar, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the melted butter.
- Preheat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, about 2-3 minutes.
- Flip and cook for an additional 2-3 minutes until golden brown.
- Repeat with the remaining batter.
- Serve warm with maple syrup, fresh fruit, or a dusting of powdered sugar.
Notes
- For a lighter version, substitute half of the ricotta with Greek yogurt.
- To add a burst of flavor, mix in 1/2 cup of blueberries or chocolate chips into the batter before cooking.
