A hearty and comforting stew made in a crock pot, perfect for a cozy meal.

- 2 pounds beef stew meat, cut into 1-inch cubes
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 4 cups beef broth
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a skillet over medium-high heat. Brown the beef stew meat on all sides, then transfer it to the crock pot.
- Add the potatoes, carrots, onion, and garlic to the crock pot.
- Pour in the diced tomatoes (with juice) and beef broth. Stir in the Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 8 hours or on high for 4 hours, until the meat and vegetables are tender.
- Taste and adjust seasoning if necessary before serving.
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 30 minutes of cooking.
- For a heartier flavor, add 1 cup of frozen peas or green beans during the last hour of cooking.
