- 2 large chicken breasts (about 1 pound total)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 1/2 cup feta cheese, crumbled
- 1/4 cup honey
- 1 tablespoon hot sauce (adjust to taste)
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, mix together the salt, black pepper, garlic powder, and paprika. Season both sides of the chicken breasts with this spice mixture.
- Set up a breading station: Place the flour in one shallow dish, beat the eggs in a second dish, and combine the panko breadcrumbs and crumbled feta cheese in a third dish.
- Dredge each chicken breast in flour, shaking off the excess. Dip into the beaten eggs, then coat with the panko and feta mixture, pressing gently to adhere.
- Heat the olive oil in a large skillet over medium-high heat. Once hot, add the breaded chicken breasts and cook for 3-4 minutes on each side until golden brown.
- Transfer the chicken to the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
- While the chicken is baking, combine the honey and hot sauce in a small saucepan over low heat, stirring until warmed through.
- Once the chicken is done, drizzle the hot honey sauce over the top and garnish with chopped parsley before serving.
Notes
- For extra crunch, try adding some crushed nuts to the panko mixture.
- You can substitute the hot sauce with sriracha or your favorite spicy sauce for a different flavor profile.
