Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup breadcrumbs (plain or Italian)
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Cooking spray or olive oil for baking

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchinis and salt. Let them sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchinis in a clean kitchen towel to remove as much liquid as possible.
  3. In the same bowl, add the breadcrumbs, feta cheese, Parmesan cheese, egg, minced garlic, oregano, black pepper, and red pepper flakes (if using). Mix until well combined.
  4. Using your hands, form the mixture into small tots or patties, about 1 to 2 inches in size, and place them on the prepared baking sheet.
  5. Lightly spray the tops of the tots with cooking spray or drizzle with olive oil for extra crispiness.
  6. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
  7. Remove from the oven and let cool for a few minutes before serving.
