- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup breadcrumbs (plain or Italian)
- 1/2 cup feta cheese, crumbled
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Cooking spray or olive oil for baking
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the grated zucchinis and salt. Let them sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchinis in a clean kitchen towel to remove as much liquid as possible.
- In the same bowl, add the breadcrumbs, feta cheese, Parmesan cheese, egg, minced garlic, oregano, black pepper, and red pepper flakes (if using). Mix until well combined.
- Using your hands, form the mixture into small tots or patties, about 1 to 2 inches in size, and place them on the prepared baking sheet.
- Lightly spray the tops of the tots with cooking spray or drizzle with olive oil for extra crispiness.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
- Remove from the oven and let cool for a few minutes before serving.

- For a gluten-free option, substitute breadcrumbs with almond flour or gluten-free breadcrumbs.
