Description

  • 1 avocado, sliced

Instructions

  1. In a mixing bowl, combine the shredded chicken, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to ensure the chicken is evenly coated with the spices.
  2. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  3. Take a portion of the seasoned chicken and shape it into small patties or nuggets. Dredge each piece in flour, dip it into the beaten eggs, and then coat it with panko breadcrumbs. Repeat until all chicken is breaded.
  4. In a large skillet, heat about ½ inch of vegetable oil over medium heat. Once the oil is hot, carefully add the breaded chicken pieces in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
  5. While the chicken is frying, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
