Instructions
- In a large bowl, combine the shredded cabbage, diced cucumber, red bell pepper, red onion, and parsley. Toss gently to mix the vegetables evenly.
- In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.

- Let the salad sit for at least 15 minutes to allow the flavors to meld.
