- 2 (15-ounce) cans of corn, drained
- 1 (8-ounce) package cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup diced green onions
- 1/2 cup diced red bell pepper
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional for heat)
Instructions
- In a slow cooker, combine the drained corn, softened cream cheese, sour cream, and shredded cheddar cheese.
- Add the diced green onions, diced red bell pepper, garlic powder, chili powder, salt, black pepper, and cayenne pepper (if using). Stir until all ingredients are well mixed.
- Cover the slow cooker and cook on low for 2 to 3 hours, stirring occasionally, until the dip is hot and the cheese is melted.
- Once cooked, stir the dip well and serve warm with tortilla chips, crackers, or fresh vegetables.
Notes
- For a smoky flavor, add 1/2 cup of cooked and crumbled bacon or 1 teaspoon of smoked paprika.
- Substitute the cheddar cheese with pepper jack for a spicier kick or use a dairy-free cream cheese and sour cream for a vegan version.
