- 2 (6-ounce) salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and black pepper. Once the oil is hot, add the salmon skin-side down and sear for about 3-4 minutes until golden brown.
- Carefully flip the salmon fillets and add the butter to the skillet. Allow the butter to melt and spoon it over the salmon for flavor.
- In a small bowl, whisk together the heavy cream, Parmesan cheese, lemon juice, parsley, and dill. Pour this mixture over the salmon in the skillet.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let it rest for a couple of minutes before serving.
Notes
- For a lighter version, substitute half of the heavy cream with low-fat Greek yogurt.
- Add sautéed spinach or asparagus to the skillet before baking for extra vegetables and flavor.
