- 2 cups uncooked penne pasta
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup spinach, chopped
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Season the chicken breasts with Italian seasoning, salt, and black pepper. Add the chicken to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chicken broth and bring to a simmer. Stir in the heavy cream and Parmesan cheese, mixing until the cheese has melted and the sauce is smooth.
- Return the chicken to the skillet, and add the uncooked penne pasta and chopped spinach. Stir to combine, ensuring the pasta is submerged in the sauce.
- Cover the skillet and reduce the heat to low. Cook for 15-20 minutes, stirring occasionally, until the pasta is tender and has absorbed some of the sauce.
- Slice the chicken and serve over the pasta. Garnish with fresh parsley before serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
