- 2 cups rotini pasta
- 1 cup cooked chicken, shredded or diced
- 6 slices bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool. Set aside.
- In a large mixing bowl, combine the cooked pasta, chicken, crumbled bacon, cherry tomatoes, red onion, and cheddar cheese.
- In a separate bowl, whisk together the ranch dressing, mayonnaise, apple cider vinegar, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the pasta mixture and toss until everything is well coated.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, give the pasta salad a good stir and garnish with chopped parsley.
Notes
- For a lighter version, substitute Greek yogurt for the mayonnaise.
- Add diced bell peppers or cucumbers for extra crunch and flavor.
