Ingredients

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1 large egg
- 1 cup milk
- 1/4 cup unsalted butter, melted
- 1 cup smoked Gouda cheese, shredded
- Honey for drizzling
Instructions
- In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
- In a separate bowl, beat the egg and then mix in the milk and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the shredded smoked Gouda cheese.
- Preheat your waffle iron according to the manufacturer’s instructions and lightly grease it.
- Pour about 1/4 cup of batter onto the center of the waffle iron and close the lid.
- Cook until golden brown and crisp, about 3-5 minutes.
- Repeat with the remaining batter.
- Once cooked, remove the waffle bites from the waffle iron and place them on a serving platter.
- Drizzle with honey before serving.
Notes
- For added flavor, mix in chopped jalapeños or cooked bacon into the batter.
- Serve with a side of maple syrup for a sweet twist.
