Description

Delicious cheesy scrolls infused with the unique flavor of Vegemite, perfect for a snack or appetizer.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup milk
  • 1/4 cup Vegemite
  • 1 cup shredded cheddar cheese
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, baking powder, and salt. Mix well.
  3. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  4. Pour in the milk and stir until just combined. Do not overmix.
  5. Turn the dough out onto a lightly floured surface and knead gently for about 1 minute until it comes together.
  6. Roll the dough into a rectangle about 1/2 inch thick.
  7. Spread the Vegemite evenly over the dough, leaving a small border around the edges.
  8. Sprinkle the shredded cheddar cheese evenly over the Vegemite.
  9. Starting from one long side, carefully roll the dough into a tight log.
  10. Slice the log into 1-inch thick pieces and place them cut-side up on the prepared baking sheet.
  11. Brush the tops of the scrolls with the beaten egg.
  12. Bake for 15-20 minutes or until golden brown and cooked through.
  13. Allow to cool slightly before serving.

Notes

  • For a twist, try adding cooked bacon or ham between the Vegemite and cheese for extra flavor.
  • You can also substitute Vegemite with a different spread like pesto or tomato paste for a unique variation.
