- 2 cups semi-sweet chocolate chips

- 1 large egg yolk
Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until smooth and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
- In a separate bowl, prepare the cheesecake filling by mixing the softened cream cheese, granulated sugar, vanilla extract, and egg yolk until smooth and creamy.
- To assemble the cookies, take a tablespoon of cookie dough and flatten it in your hand. Place a teaspoon of cheesecake filling in the center, then wrap the cookie dough around the filling, sealing it completely. Roll into a ball and place on the prepared baking sheet.
- Repeat with the remaining dough and filling.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
