Cheesecake-Stuffed Chocolate Chip Cookies are irresistible treats that combine the rich flavors of cheesecake and chocolate chip cookies into one delicious dessert.


Ingredients

  • 2 large eggs
  • 2 cups semi-sweet chocolate chips
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1/2 teaspoon vanilla extract (for filling)
  • 1 large egg yolk

Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until smooth and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
  6. In a separate bowl, prepare the cheesecake filling by mixing the softened cream cheese, granulated sugar, vanilla extract, and egg yolk until smooth and creamy.
  7. To assemble the cookies, take a tablespoon of cookie dough and flatten it in your hand. Place a teaspoon of cheesecake filling in the center, then wrap the cookie dough around the filling, sealing it completely. Roll into a ball and place on the prepared baking sheet.
  8. Repeat with the remaining dough and filling.
  9. Bake for 10-12 minutes, or until the edges are golden brown.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
