- 1/2 cup buffalo sauce
- 1 cup cooked brown rice
- 1 cup chopped romaine lettuce
- 1/2 cup cherry tomatoes, halved
- 1/4 cup shredded cheddar cheese
- 1/4 cup ranch dressing
- 1/4 cup sliced green onions
- Salt and pepper to taste
Instructions
- In a medium bowl, combine the cooked shredded chicken and buffalo sauce. Mix well until the chicken is evenly coated.
- In a serving bowl, layer the cooked brown rice as the base.
- Top the rice with the buffalo chicken mixture.
- Add the chopped romaine lettuce and cherry tomatoes on top of the chicken.
- Sprinkle shredded cheddar cheese over the salad.
- Drizzle ranch dressing over the entire bowl.
- Garnish with sliced green onions and season with salt and pepper to taste.
