Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
  6. Using a tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are set but the centers are still soft.
  8. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
  9. While the cookies are cooling, prepare the peanut butter frosting by beating together the peanut butter and softened butter until smooth.
  10. Gradually add the powdered sugar, milk, and vanilla extract, mixing until creamy and spreadable.
  11. Once the cookies are completely cool, spread a generous amount of peanut butter frosting on the flat side of one cookie and top it with another cookie to create a sandwich. Repeat with the remaining cookies.

Notes

  • For a richer flavor, try adding a pinch of espresso powder to the brownie cookie dough.
