- 2 English muffins, split in half
- 1 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 4 large eggs
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup cooked breakfast sausage or diced ham (optional)
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Place the split English muffins on a baking sheet, cut side up.
- Spread about 2 tablespoons of pizza sauce on each muffin half.
- Sprinkle shredded mozzarella cheese evenly over the sauce on each muffin.
- In a small bowl, crack the eggs and season with Italian seasoning, salt, and pepper.
- Carefully crack one egg onto each muffin half, taking care not to break the yolk. If using sausage or ham, sprinkle it around the egg.
- Bake in the preheated oven for 12-15 minutes, or until the egg whites are set and the yolks are cooked to your liking.
- Remove from the oven and let cool for a minute. Garnish with fresh basil or parsley if desired.
- Serve warm and enjoy your breakfast pizza!
