  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon olive oil (for cooking)
  • Burger buns (4)
  • Toppings: lettuce, tomato, avocado, or your choice

Instructions

  1. In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the breadcrumbs, corn, onion, bell pepper, garlic, chili powder, cumin, salt, black pepper, and egg to the bowl. Mix until well combined.
  3. Divide the mixture into four equal portions and shape each portion into a patty.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until they are golden brown and heated through.
  5. Toast the burger buns in the skillet for about 1-2 minutes until lightly browned.
  6. Assemble your burgers by placing a patty on each bun and adding your desired toppings.
