- 1 can (15 ounces) black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/2 cup corn (fresh or frozen)
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 1 tablespoon olive oil (for cooking)
- Burger buns (4)
- Toppings: lettuce, tomato, avocado, or your choice
Instructions
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the breadcrumbs, corn, onion, bell pepper, garlic, chili powder, cumin, salt, black pepper, and egg to the bowl. Mix until well combined.
- Divide the mixture into four equal portions and shape each portion into a patty.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until they are golden brown and heated through.
- Toast the burger buns in the skillet for about 1-2 minutes until lightly browned.
- Assemble your burgers by placing a patty on each bun and adding your desired toppings.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce to the mixture.
- Substitute the breadcrumbs with crushed tortilla chips for a different texture and flavor.
