  • 1 cup cooked jasmine rice
  • 1 cup coleslaw mix
  • 1/2 cup green onions, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper, then add to the skillet. Cook for 2-3 minutes on each side until shrimp are pink and opaque. Remove from heat.
  3. In the skillet, add the cooked shrimp to the sauce mixture, tossing until well coated.
