- 2 cups cooked shredded beef (such as brisket or chuck roast)
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/4 cup chopped fresh cilantro
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 small corn tortillas
- Cooking spray or olive oil for brushing
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, combine the shredded beef, cheddar cheese, onion, cilantro, garlic powder, cumin, chili powder, salt, and black pepper. Mix well until all ingredients are evenly combined.
- Warm the corn tortillas in a microwave for about 30 seconds to make them pliable.
- Take a tortilla and place about 2 tablespoons of the beef mixture in the center. Roll it tightly, starting from one end, and place it seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.
- Lightly spray or brush the taquitos with cooking spray or olive oil to help them crisp up in the oven.
- Bake for 20-25 minutes, or until the taquitos are golden brown and crispy.
- Serve hot with your favorite dipping sauces, such as salsa, guacamole, or sour cream.

- For a spicier kick, add diced jalapeños to the beef mixture.
