A delicious and satisfying Bacon and Avocado Quesadilla recipe that combines crispy bacon, creamy avocado, and melted cheese, perfect for any meal.

- 2 large flour tortillas
- 4 ounces cooked bacon, chopped
- 1 ripe avocado, sliced
- 1 cup shredded cheddar cheese
- 4 large eggs
- Salt and pepper to taste
- 1 tablespoon olive oil
- Sour cream and salsa for serving (optional)
Instructions
- In a skillet over medium heat, add the olive oil. Once hot, crack the eggs into the skillet and season with salt and pepper. Scramble the eggs until fully cooked, about 3-4 minutes. Remove from heat.
- Lay one tortilla flat in the skillet. On one half of the tortilla, layer half of the scrambled eggs, half of the chopped bacon, half of the avocado slices, and half of the shredded cheese.
- Fold the tortilla over to cover the filling. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat the process with the second tortilla and remaining ingredients.
- Once both quesadillas are cooked, slice them into wedges and serve warm with sour cream and salsa if desired.
Notes
- For a spicier kick, add sliced jalapeños or a sprinkle of red pepper flakes to the filling.
- You can also substitute the cheddar cheese with pepper jack for an extra layer of flavor.
