- 2 ripe avocados
- 4 slices of whole grain bread
- 1 cup cherry tomatoes, halved
- 4 ounces feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Toast the slices of whole grain bread until golden brown and crispy.
- While the bread is toasting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
- Mash the avocados with a fork until creamy, then stir in the lemon juice, olive oil, salt, and pepper to taste.
- Spread the mashed avocado mixture evenly over the toasted bread slices.
- Top each slice with halved cherry tomatoes and crumbled feta cheese.
- Garnish with fresh basil leaves if desired. Serve immediately.
Notes
- For a spicier kick, add a pinch of red pepper flakes on top before serving.
- You can also substitute the feta with goat cheese for a tangier flavor.
