ANZAC Cookies are a delicious treat with a perfect crunch, made from rolled oats, flour, brown sugar, and coconut.
Ingredients

- 1 cup rolled oats
- 1 cup all-purpose flour
- 1 cup brown sugar, packed
- 1 cup shredded coconut
- 1/2 cup unsalted butter
- 1/4 cup golden syrup (or light corn syrup)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons water
Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, flour, brown sugar, shredded coconut, and salt.
- In a small saucepan, melt the butter and golden syrup over low heat. Stir until smooth.
- In a separate small bowl, mix the baking soda with the water until dissolved. Add this to the melted butter mixture and stir well.
- Pour the wet ingredients into the dry ingredients and mix until fully combined.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of a spoon.
- Bake for 10-12 minutes or until golden brown. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a chewier cookie, reduce the baking time by a couple of minutes.
- Try adding chocolate chips or nuts for extra flavor and texture.
